The proposed studies involve the analyses of S-RB and non-stabilized rice bran (NS-RB) extracts for differences in antioxidant capacity and phytochemical profiles. The ability of S-RB supplements to modulate starch digestibility of high GI rice varieties using an in-vitro starch digestibility model. Humandietary intervention studies and in-vitro assays to study the influence of S-RB on biomarkers of endothelial function, inflammation, oxidative stress, platelet function. The hypothesis is that, rice bran rich in bioactive compounds, that impart antioxidant, free radical scavenging and metal chelating activity, could potentially alleviate risk factors and/or precursors associated with CVD and Type II diabetes.
